Production Process
In the first phase, a macerate of wild cherries and sour cherries is prepared, slowly releasing their intense, naturally sweet aromas. The fruit is handled gently to preserve its juiciness and character, without added sugars. Selected botanicals are then introduced, including star anise, whose warm, subtly sweet spice note creates a distinctive contrast and depth.
This is followed by a slow, traditional distillation, ensuring that only the finest, purest, and most aromatic layers are preserved in the final spirit. Each element is distilled at its own pace—fruit, herbs, and spices—to maintain complete control over the flavor profile.
The gin is then left to rest, allowing the flavors to settle and round into a harmonious whole.
