Sainte-Croix-du-Mont is considered the most important sweet white wine appellation on the right bank of the Garonne in the Bordeaux wine region.
It’s not for nothing that the best examples are considered an affordable (and younger drinkable) alternative to the much more famous (and more expensive) wines from Sauternes across the river. This Sainte-Croix-du-Mont, a cuvée from Château du Mont, is made from predominantly sémillon and a tiny bit of muscadelle from 60-year-old sticks.
Once affected by noble rot (pourriture noble), the grapes are carefully harvested by hand in several rounds. The infestation by noble rot creates a concentration of flavors and sugars. This also produces a sweet wine, with flavors of dried fruit, such as apricot and date, and some honey.
You can drink this Sainte-Croix well chilled after a meal, but it can also be used widely at the table. With goose liver, for example, or with soft cheeses or desserts that are not too sweet. The wine is now drinking nicely, but can also be stored for several years.
