Every year has its specifics and 2021 was no exception. A moderately warm start to spring quickly gave way to colder days. Vegetation was subdued, in keeping with the season. However, at the beginning of April there was an intrusion of colder air, which affected quite a few varieties due to temperatures below freezing. Early varieties such as chardonnay and rizvanec were mainly affected, while a visible decline also occurred in late red varieties. The flowering of the vines was quite late, even more so than the year before, which indicated a later harvest in autumn. The summer was unusually dry and warm, but the nights were cool, which is crucial for maintaining the variety and fresh aromatics. Unfortunately, there was hail in quite a few locations, which is why the share of the crop was further reduced. The bulk of the harvest began in the second half of September and ended in the last part of October. Due to natural events, the harvest was depleted, but due to tolerance and good weather during the harvest, the grapes ripened to perfection and offered us an exceptional potential for the wines of the year 2021. Winemaking: Hand-picked grapes in mid-October. Gentle stalking and maceration, during which alcoholic fermentation took place. After completion of fermentation, mild pressing followed, followed by malolactic fermentation in stainless steel containers. After the mlolactic fermentation was successfully completed, the wine was pumped into used 500-liter French oak barrels, in which the wine rested on fine lees with constant stirring for 1 year. The wine was without added sulfur until bottling, in order to achieve a gentle oxidation of the wine, thereby softening the rough tannins that were the result of long-term maceration. Wine description: It would probably be most appropriate to say that the wine is “Orange”, but the fact is that the color palette offers us quite a few different shades, and it could be placed in the category of deep gold – faint amber. Perceptible spices and herbal notes on the nose, wet stone, overripe stone fruit, secondary notes in the shades, which lead to a gentle note of bread crust and butter. In the mouth, the minerality and complexity of the wine itself surprises. Lightly perceptible spices are interwoven with a herbal note throughout, there is no shortage of autolytic notes, which are accompanied from the beginning to the end of the tasting by nicely integrated tannins and minerality. Temperature: For maximum enjoyment, we recommend a temperature between 14-16 degrees Celsius. Storage of wine: up to 7 years after harvest They go well with wine:
Wine goes well with dishes based on mushrooms, offal and dishes from the oven.
